ingredients 12 (6–in.) corn tortillas 2 cups diced cooked unsalted chicken breasts 1 can (14.5 oz) black beans, drained and rinsed 1 medium red onion, divided 1 cup loosely packed fresh cilantro, divided 1 cup shredded Chihuahua cheese or Monterey Jack cheese, divided ¼ cup light mayonnaise 2 garlic cloves, pressed ¼ tsp each salt and coarsely ground black pepper 3 kiwi, peeled 1 jalapeño pepper, stemmed and seeded 1–2 limes 2 cups diced fresh pineapple |
